Pineapple Dip (Pineapple Raita)
My husband refers it as” Dilkhush Raita”,as in whatever is the season this raita compliments your food well.Melting sweetness of curd and juicy crunch of pineapple makes it a perfect,Dilkhush raita.Goes well as soothing compliment with your spicy pulao,biryani or parathas or as a dip to cutlets.
Pineapple pieces(fresh or tinned) 1 Bowl
Curd one and half Bowl
Black pepper,salt and sugar to taste
Mint leaves 4-8
For Garnishing:Mint leaves
1.Take pineapple pieces in a pan and add sugar and salt to it.You may add 2-6 table spoon of sugar as per your taste and sweetness of pineapple.Tinned pineapple may require less sugar.Cook pineapples till it become little tender.
2.Once pineapple gets tender ,switch off the burner and let it cool for few minutes.
3.Whisk the curd to remove the lumps and add pineapple pieces to it.Add black pepper,and crushed mint leaves and mix well.
Your tempting pineapple Raita is ready.Garnish it with mint leaves and Serve it with spicy pulao or biryani.
