Creamy,fluffy,chilled dahi vada is one of the pure delights of summer.Though one shouldn’t refer it as seasonal or summer special as you could spot in any season being served in parties,still it tastes bestest in summers.Vadas are to be made with black gram (udad) dal and to be deep fried.That is why I dropped the idea to make it so many times.This time I tried it with Appam pan(muffin Pan) and hurrrey..The oil consumption lessened to its quarter.:)
You just have to use non stick appam pan and drizzle very little oil along the sides of vadas..Kudos to the Idea!!!!!!
In order to have fluffy,spongy vada you need to aerate the batter well .Here I have added pinch of soda to the batter and whisk it to the best.
In most part of the country they fry the vadas and immediately immerse them into water and then take vada s out pressing it by palms.I have seen caterers following this method when they have to deal with big amount of vadas.I tried this method earlier and believe me it works the best.If you are not comfortable,stick to method of soda and whisking.
Chilled,well whisked yogurt/curd that I have used is also home made as I don’t like Store bought one.Dahi vadas should be served with green chutney and Tamarind chutney(optional).Never forget chaat masala to sprinkle over it. Here I go with the recipe.
Black grams (Udad Dal) 250 gms
Yogurt/curd ½ litre
Salt and sugar to taste
Pinch of cooking soda
Cumin seeds powder
Green Chutney (optional)
1.Soak udad dal overnight and grind it in a morning with required water to have smooth paste.
2.Whisk the batter well and add salt and pinch of soda.
3.Heat the appam pan and pour the batter in roundels.drizzle little oil along the sides of vadas.
4.Once vadas are cooked at one side flip it to cook it on another side.Avoid making it crisp.
5.Whisk well the yogurt and add salt and sugar.
6.Take out vadas from pan and dip it in yogurt.Let all the vadas rest in curd for 15-20 mins.
7.Cool the vadas in refrigerator for 10 mins and serve chilled.
8.Take dahi vadas in aplate,sprinkle chilli powder cumin powder and chat masala.
In pics I have served dahi vada with caramelized pineapple(This is for my darling daughter)and another one with boiled peas(for hubby dear).I made pile of vadas and poured curd overit. These.These arrangements are for garnishing purpose and you may simply omit it.
