When Veggie parathas seems boring…Try these very healthy and wholesome and yet very delicious soft parathas.Unlike regular stuffed parathas these are just “Mix n roll” type of parathas and that is why very easy and quick too.
For these parathas you need soya granules which are easily available in market.If any how you found difficult to get it you can boil your regular soya chunks and mash it with hands and mix into flour.You may add mashed sprouts too in the mix to make it more nutritious but I kept it simple with highly protein rich soya(more proteins than meat even)only.
Soya granules 1 cup
Whole wheat flour 1 cup
Onion(Finely chopped)1 in no.
Tomatoes (finely chopped) 2 in nos.
Kasuri methi 1 tablespoon(optional)
Cumin powder 1 Teaspoon
Turmeric powder 1 Teaspoon
Chilli powder 11/2Teaspoon
Salt to taste
Oil for shallow frying
1.boil soya granules for 2 mins with little salt,Drain the water and take in a mixing bowl.
2.Add wheat flour,onions,tomatoes,all spices mentioned above and knead a soft dough with required amount of water.
3.Make small balls of the dough and roll them to make round parathas.
4.Roast these parathas on heated pan with little oil on the sides of parathas.Cook it to the both of the sides till golden brown.
5.Serve parathas with curd of tomato sauce.
