All time favourite,rich,thick,creamy Cream of tomato soup.The soup needs no introduction.
I love it the most because my extremely picky eater daughter takes no time to finish a bowl of this soup.
very common still alluring and healthy and yummy.Right from the moment I had its successful attempt in my kitchen,we never ordered it restaurants.I bet you this version of soup is even better than restaurant bought or the one which gets served in parties or functions.
Addition of carrots makes it even healthier.You may vary proportion of spices based on your taste.If you are making it for your kids better to keep it mild.
Tomatoes 5-6 in nos.
Carrots 2 in nos.
Onion 1 medium sized Chopped
Garlic cloves 5-6
All purpose Flour 1 Tablespoon
Bay leaf 1
Cinnamon Sticks 2
Black pepper Powder 1 Teaspoon
Salt and sugar as per taste
Water 1 or 11/2 cup
Cream 1 cup( half cup for garnishing)
1.Heat a pan with butter and temper it with bay leaf and cinnamon stick.
2.Add chopped Onions and garlic and sauté for 2 mins.
3.Add peeled and chopped carrots and all purpose flour and mix well.Cook till carrots become little tender and flour gets roasted.
4.Add chopped tomatoes and let it cook for next 5 mins.
5.Remove the pan from heat and the mixture gets cool blend it in a blender with sugar and salt added into and it.Don’t forget to remove bay leaf and cinnamon stick before blending.
6.Now strain the puree to remove any coarse bits and add black pepper powder. Add 1 cup of water and Heat the soup in an another pot to boil it once.
7.Add cup of cream in soup and stir well.While serving pour the soup in bowl and garnish with cream crutons,and mint leaves.
