I am in badly love with this kachhe aam ki lounji.A quick,easiest,sweet and sour pickle which can be refrigerated for a week .
The major spice we add in this pickle is methidana(dried fenugreek seeds).Slight bitter taste of methidana is perfect combo with sour mangoes and sweet jaggery.
Some versions of lounji has nigella seeds in place of methidana.I prefer methidana coz its my favourite.
Jaggery can be substituted with with sugar but if you ask me methidana and jaggery are JAAN (Major flavoring agent)of this lounji.
Kairi(raw mangoes) 1 cup Peeled and finely chopped
Oil 1 tablespoon
Dried Fenugreek seeds 1 tablespoon
Green chillis 2 in nos.
Turmeric Powder ½ tablespoon
Cumin and Mustard seeds ½ teaspoon
jaggery ¾ cup (or sugar)
Salt to taste
3.Add chillis,turmeric powder .
5.Add jaggery and cook for another 5-7 mins till jaggery melts completely and get cooked well with mangoes.
6.Kairi ki lounji is ready .keep in a glass jar and refrigerate .It can be consumed for a week.
