Another restaurant style yet very simple recipe by me.The name itself is self explanatory Bhindi Do pyaza that is okra and onion fry with double the onions than okra.
Onions really make wonders in stir fried vegetables and this recipe is super example of that.This simple yet elegant sabji is perfect side dish for chapattis or pooris or naan.Wanna cut that extra spicy sabjis in your menu try this okra in a new version.
Okra(ladies finger) 500 gms
4 big onions sliced
Red chilly powder 1 tablespoon
Turmeric powder 1Teaspoon
Garam Masala(All ground Spice powder) 1 teaspoon
Lemon juice 1 Tablespoon
Salt to taste
Oil 2 tablespoon
1.Wash okras thoroughly under running tap and wipe off all the water with kitchen towel.Place okras in a basket and let it dry completely.okras need to be totally moisture free before chopping otherwise it tend to produce laces and chopping will be a mess.
2.Chop the okras in equal sized roundels as shown in picture.
3.Heat oil in pan and add sliced onions just stir once.
4.Dont let the onions become translucent as we need to retain its crunch.Add chopped okras.Mix well.
5.Season it with all the spices given above and add salt.
6.Cook on low flame till bhindi becomes tender then add garam masala and lemon juice.lemon juice again helps in reducing lacing of bhindi.Mix well.
7.Stir well and serve with rotis.
