Rice pudding is just another rice kheer recipe with some variations.Normally we make kheer by roasting rice in ghee or in some regions of India it involves grinding of roasted rice .This rice pudding recipe is so simple which involves no roasting as I am using cooked rice.
Another plus point of the recipe is you don’t have to use a drop of ghee or butter.Yeah a kheer can be made without ghee.I made this rice pudding once when we had finished our dinner and were severly craving for some sweet.Having nothing sweet at home I ended up making this rice pudding from leftover cooked rice and since then it has become a most welcomed quick dessert at my home,Both my hubby and my kiddo are sweet lovers and that made me seeker of such quick dessert recipes.
Rice pudding recipe involves no baking no eggs unlike any other pudding recipes.An Absolute winner.
Here is the recipe.
cooked rice 1 cup
Milk 21/2 cups full cream
Sugar ¾ cup
Cardamom powder 1/2tsp
Toasted dry fruits 1 tbsp(I used almonds)
1.Put cooked rice in blender and with ½ cup of milk blend it to smooth puree.
2.Heat milk in a pan and put it to boil.
3.Add rice puree and sugar ..stir well.
4.let the milk boil til it gets thickened.
5.Add cardamom powder and dry fruits.Serve hot or chilled.
