Adding greens in your diet and in a style….Here comes crispy rolls with coriander and nuts stuffing.Extremely delicious and very well known street food in Vidarbha(East Maharashtra) region of Maharashtra.Traditionally get served with “Kadhi” but can go with tomato sauce and green chutney too.
Coriander is our own widely used Indian herb.None of our garnishing completes without Dhaniya.very few knows that it comes with its own health benefit too.Its full of vitamins and iron specially.Known to work over detoxifying body.And ladies its good for skin too.So what are you waiting for? I don’t have to tell you benefits of nuts.Do try this Sambharvadi at home and win your beloved hearts.
Coriander leaves 2 cups(try to include fresh and tender stems)
Peanuts 1 cup
Cashew nuts ½ cup
Desiccated coconut ½ cup
Ginger garlic paste 1 teaspoon
Cumin and mustard seeds 1 teaspoon
Green chillies(chopped) 3-4 in no.
Sugar 1 Teaspoon
All purpose flour(Maida) 1 cup
Salt to taste
Oil for frying
1.Wash coriander thoroughly and fine chop.
2.Roast peanuts and grind coarsely.
3.Take all purpose flour add heated oil(1tspoon) as a moyan ,salt and knead a soft dough.Keep it aside for rest covering it with wet kitchen cloth.
4.Heat a pan and temper it with cumin and mustard seeds,ginger and garlic paste,and green chillis one by one.
5.Now add peanuts,cashew nuts and coriander leaves and mix well.
6.Let the mixture cook till it shrinks its size and coriander gets cooked stirring often.
7.Add sugar,salt and desiccated coconut and mix well.Remove the pan from heat.
8.Roll rectangular sheets of dough and add spoonfull of stuffing into it.Form a proper roll and close is both of the ends.Repeat the procedure for other rolls too.
9.Heat oi land deep fry these rolls till golden brown and take out on tissue paper.
10.Serve with kadhi,tomato sauce or green chutney.
