No exception to all households I too have a brinjal hater in my family and he is my husband.He always used to tease me for loving brinjals and would say it is “gaounwaloki pasand” (pure country style food).Thogh now he has started loving Baigan bharta, An ardent lover of baigan in me makes him eat brinjals in some or other form.One of his favorites now is this Bengal style snack Baigan Bhaja.
Though it is a snack, baigan bhaja can be a perfect side dish for your roti or rice .You can make it for those busy afternoons which demands quick side dish. A perfectly spiced sliced aborigine’s pan fried to a crisp.
These Baigan bhaja (Bengal style shallow fried marinated slices of Aubergines) is sure to become household for baingan lavers like me.

Aburgines /eggplant/brinjal 1 large
Rice flour 2 tbsp
Chili powder 1tsp
Salt as per taste
Turmeric powder 1tsp
Garam Masala 1tsp
Aamchur (dried mango) powder 1tsp
Oil for shallow frying
1. Slice brinjals and keep them in salted water for 15 mins.
2. Mix all the spices except rice flour and marinate brinjal slices in spices for 20 mins.
3.Take rice flour in shallow plate. Coat every slice of brinjal into rice flour .Shallow fry them on frying pan with little oil.
4. Once slices get cooked from one side, flip it and cook the other side too till golden brown.
5. Drain the slices on kitchen paper towel.
6. Serve with roti, naan or just as a snack.
